Dice up your onion, chorizo and cut your cherry tomatoes in half or quarts.
Boil water to cook your gnocchi in.
Cook the chorizo for 5 minutes and take out of the pan. Place it on a paper towel to remove some of the grease.
Cook the onion in the chorizo grease until translucent
Add in the cherry tomatoes and let it sit for 5 minutes.
While you’re waiting for the tomatoes to be done, add the gnocchi to the pan and cook.
Add in the chorizo and gnocchi to the tomato mixture and mix well
Plate up the gnocchi dish and top it off with Parmesan cheese. Enjoy!
