Easy and delicious Gnocchi with Chorizo

There is nothing better than having a frugal, easy recipe on hand that you know your entire family absolutely loves! Well, this gnocchi with chorizo is definitely one of those for our family, so I just had to share it with you. I am curious what your family thinks of this simple recipe!

Notes

Tomatoes cut into part
  • You can easily make gnocchi yourself, or so I’ve been told. I have never tried it but it is definitely on my list of ‘have to try one day’.
  • The Parmesan is listed as optional, because I wanted to make this a frugal recipe for whenever we really need a delicious, low budget meal. But it actually is not really optional. It is just so delicious with Parmesan that I would not recommend leaving it out unless you really have to!
  • We eat this dish as a family of five. But our children eat quite a lot, so you might be able to feed more people with this amount of food. Just FIY.
  • If you want to add more green, you could easily add spinach to the ‘sauce’ as well, or serve the gnocchi with a nice salad.

Gnocchi with Chorizo

Ingredients

Main ingredients

  • 1 Kg Gnocchi
  • 250 Gram Chorizo diced
  • 500 Gram Cherry tomatoes halved
  • 1 Yellow onion diced

Optional (But highly recommend)

  • Parmesan grated

Instructions

  • Dice up your onion, chorizo and cut your cherry tomatoes in half or quarts.
  • Boil water to cook your gnocchi in.
  • Cook the chorizo for 5 minutes and take out of the pan. Place it on a paper towel to remove some of the grease.
  • Cook the onion in the chorizo grease until translucent
  • Add in the cherry tomatoes and let it sit for 5 minutes.
  • While you’re waiting for the tomatoes to be done, add the gnocchi to the pan and cook.
  • Add in the chorizo and gnocchi to the tomato mixture and mix well
  • Plate up the gnocchi dish and top it off with Parmesan cheese. Enjoy!
